What are they?

Our jelly recipes are based on a classic French Pâte de Fruit.

At their simplest a Pâte de Fruit is a puree of fruit heated with sugar. The naturally occurring pectin in the fruit sets the thickened and sweetened puree into a set jelly. This is then cut and dusted in granulated sugar. 

Developing our range

In order to extend our range and broaden the flavours of the jellies we add additional fruit pectin powder and some liquid glucose. This helps them store better and improves their texture.

Over the years of making Pâte de Fruit we developed a recipe that allowed us to incorporate a much wider range of flavours. That has been both about the method and technique of making them. Since we started making jellies we have developed our core range to include classics such as Strawberry and Blackcurrant as well as popular flavours such as Orange & Cardamon and Sour Cherry and seasonal specials such as Mojito and Pina Colada.

What to buy?

Our signature flavour jelly boxes are a great introduction to our range of jellies or pick your own box of 9,12, 16 or 25. These boxes work well as gifts or as something to serve at the end of delicious meal. The range of flavours means there will be something for everyone.
