By far, the most common question we’re asked about our macarons is: are they gluten free?
As someone with family members who have Coeliac disease and a medical background, I take this seriously.
To label a product as gluten-free, there are strict guidelines that must be followed, requiring clear evidence and proper procedures. While we bake a wide range of delicious treats, some of which contain gluten, we take great care to prevent cross-contamination in both our bakery and shop. However, since wheat flour is present in our building, we believe it would not be accurate or appropriate to label our products as gluten-free. For food to truly be free of an ingredient, absolute certainty is required.
If gluten is a concern, it’s always worth checking how macarons are made and the systems in place in that macaron making kitchen.
What are macarons made of?
Most of our macarons do not include gluten containing ingredients. The basic shell is made with almonds, sugar, and eggs—simple yet delicious. Fillings vary and include options like chocolate ganache, buttercream, fruit purées, and even cream cheese. Once, we created a macaron filled with a coconut macaroon featuring Emmanuel Macron’s face stencilled on the shell—delicious but odd.
That said, some of our flavours, like Cookies & Cream, do contain gluten. While we rarely make other gluten-containing flavours, it’s always good to check our ingredient list. You can view the full range of our current flavours and their ingredients here.
Coeliac Disease
For those with Coeliac disease, macarons can often be a good choice. While we don’t label ours as gluten-free, we take care to minimise risk and provide transparency about our ingredients and processes.
